British Turkey & Apple Burgers

Ingredients

  • 350g/12oz turkey mince
  • 4 spring onions, trimmed and finely chopped
  • 1 cooking apple, peeled, cored and grated
  • grated rind 1 small orange
  • 25g/1 oz pine kernels, chopped
  • 3oz/75g of white breadcrumbs
  • 50g/ 2oz fresh ground black pepper
  • 1 medium egg, beaten
  • 2-3 tsp sunflower
  • 1 eating apple
  • 4 baps
  • 2-3 tbsp mango chutney
  • apple wedges to garnish

Instructions

Light the barbecue coals 20 minutes before cooking or according to manufacturers instructions.

Place the turkey mince in a mixing bowl and stir in the spring onions, grated apple, orange rind, pine kernels and breadcrumbs. Add seasoning to taste and mix the ingredients together. Bind together with the beaten egg and form into 4 round burgers. (You may find it easier to shape the burgers if you dampen your hands slightly).

Place the burgers on a plate, cover then chill in the refrigerator for 30 minutes.

Brush the burgers with a little oil then place on the barbecue rack and cook over the hot coals for 10-12 minutes or until thoroughly cooked. Turn the burgers over at least once during cooking.When cooked, drain on absorbent kitchen paper.

Meanwhile, core the apple and cut into slices. Brush with a little oil then cook over the hot coals for 2-3 minutes or until slightly softened. Split the baps and place, split side down over the hot coals for 1-2 minutes or until lightly toasted.

To serve, place the apple rings on the base of the apple bap and spread with a little mango chutney. Top with the cooked turkey burgers and cover the lid.

Garnish and serve.
