Ingredients
- 200g cooked turkey breast, shredded
- 200g mashed potatoes
- 50g Brussels sprouts, cooked
- 1 egg yolk
- 10g butter
- salt, to season
- vegetable oil
Instructions
Into a large bowl, prepare the ingredients by chopping up the sprouts and mixing them with the shredded turkey and mashed potatoes. Add the egg yolk and salt. Shape the mixture into patties 10cm approx. in size
Preheat your oven to 180C/gas mark 4. Line a large tray with parchment paper
Over medium heat, add a small amount of vegetable oil into a pan and fry each pattie, colouring each side. Add 10g of butter to the pan to finish the browning process adding another spoon of butter to finish to the final flavour
Once cooked, place the patties on the prepared tray in the oven and cook for 10 minutes until browned and cooked thoroughly
Remove from the oven and serve hot with a generous spooning of cranberry sauce or your favourite chutney.
