Ingredients
- 100g British Turkey Steaks
- 10g Applewood Smoke Rub
- 100g Diced Leeks
- 400g Shredded Greens
- 2.5l Vegetable Stock
- 120g Cooked Pearled Spelt
- 5g Chopped Chives
- Sea Salt
- Milled Black Pepper
Instructions
Cut the turkey into small dice and sprinkle over the smoke rub
Pan fry and set aside when cooked
Sauté the leeks and add the greens, cook until vibrant green and season well
Heat the stock and add the spelt
Add the greens and turkey to the hot stock
Check the seasoning and stir in the chives
Place into soup bowls and serve with seeded flatbreads or parmesan straws
