Fruity Turkey Bake

Ingredients

  • 2 slices bread + milk to soak
  • 1 tbsp sunflower oil
  • 1 onion, diced
  • 1 tablespoon mild or medium curry powder
  • 500g British turkey thigh mince
  • 3 cloves garlic, crushed
  • 1 tablespoon mango chutney
  • 2 bay leaves plus extra for decoration (optional)
  • 75g dried sultanas
  • 1 egg, whisked
  • 150 ml milk
  • Salt & pepper to taste
  • Rice to serve

Instructions

Tear up the bread and lay it in the bottom of a shallow dish. Pour over just enough milk to soak it through. Leave to one side.

Heat the oil in a large pan and fry the onion for 4-5 minutes until soft. Add the curry powder and stir-fry for another minute.

Add the turkey mince along with the garlic and stir-fry until browned. Use a wooden spoon to break it up as it cooks.

Add the mango chutney, bay leaves, sultanas and milk-soaked bread. Stir well and season so taste.

Simmer the mixture for around 10 minutes stirring frequently so everything is very well combined.

Spoon the mixture into one large or four individual ovenproof dishes. Press the mixture down with the back of a spoon.

Beat the egg and milk together and pour over the mince. Bake for 35–40 minutes (or 20-25 minutes if using small dishes) until the topping is set and golden. Serve with rice.
