Lemon and Honey British Turkey

Ingredients

  • 4x 150g/5oz turkey steaks
  • 1 tbsp wholegrain mustard
  • 1 tbsp clear honey, warmed
  • 1-2 tsp. hot chilli sauce
  • 2 tbsp light soy sauce
  • 4 tbsp lemon juice
  • 1 tbsp zested lemon rind

To garnish

  • Fresh herbs
  • cherry plum tomatoes

To serve

  • Couscous salad, warm crusty bread and relish of your choice

Instructions

1Lightly rinse the turkey and place in a shallow dish. Blend the mustard with the honey then stir in chilli sauce to taste, soy sauce and lemon juice and rind.

Pour over the turkey, cover lightly and leave in the fridge for at least 30 minutes, spooning marinade occasionally over the turkey.

When ready to cook lightly oil a griddle pan or a non stick frying pan and place over a moderate heat and heat until hot.

Drain the turkey steaks, add to the pan and cook on both sides for 2 minutes to seal. Reduce the heat and continue to cook for 8-10 minutes or until thoroughly cooked.

Garnish and serve with the salad, bread and relish.
